It's a baked potato soup sort of day.
9 potatoes baked, peeled and diced • 2/3 cup butter • 2/3 cup flour • 6 cups whole milk • 1/2 Tbs salt • 1/2 tsp pepper • 
1 cup cheddar cheese shredded • 1 lb bacon, cooked, chopped • In a large pan, melt butter together with the flour until bubbly • Slowly add milk (1 cup at a time) • Stir until smooth • Bring to a boil and simmer until thickened • Stir in salt, pepper and cheese until melted • Add baked potatoes, stirring until they are heated through
Serve with additional cheese and bacon.
